Thrifty Deals into Thrifty Meals

I started this post a few hours ago, then left the room to go make dinner.  Little did I know my 7 year old son, got on my computer and typed his little heart out.  Then he managed to hit the publish button.  It posted for a few hours, and I did not even know.  I about died when I came out to work on it and saw it posted….  Looking all crazy!!!!  So sorry for any confusion.

One of the best ways to be Thrifty is to reduce waste. I hate brown bananas, they make me gag, but they make wonderful banana bread, or pop them into the freezer and make a fruit smoothie with them.

Cream cheese banana bread

In a bowl mix,

  • 3/4 cups softened butter
  • 1 (8oz) cream cheese softened
  • 2 cups sugar

Mix till well blended then add

  • 2 large eggs

In another bowl mix dry ingredients

  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Slowly add to wet ingredients,  Don’t over mix it…

Once you have dry ingredients mixed in, add

  • 1 and 1/2 cups mashed bananas ( about 4 bananas)
  • 1 cup pecans (optional)
  • 1/2 teaspoon vanilla

 

img_0442You can make muffins or bread, I always make 12 muffins and 1 loaf of bread.  Bake the muffins at 350 degrees for 25 minutes.  Cook the bread for 1 hour on 350 degrees.  Make sure the middle is done before you take it out of the oven.  Test it with a toothpick if it pulls out clean it should be done.

Crock pot Italian Chicken

I was able to make this meal for my family of 5, for $4.38

 About .87 cents a person.

When you stock up on items at their lowest price, and fill your pantry with them.  You are then able to use them for weeks to come, saving your family time and money.

  Crock pot Italian chicken  Recipe:

In your crockpot add chicken ( I used 2 large breast, they are about the size of 4 smaller breast that I am use to).  On top of the chicken, add 1 table spoon Italian seasoning. Add 1/2 cup water, 1 can cream of chicken soup, and 1 brick of cream cheese.  Put the lid on and cook on high for the first hour and 1/2,  mix it all up with a spoon making a sauce.  Put the lid back on and cook on medium for another 2 hours.  We eat it over the top of white rice, my family loves it.

I forgot to add that you can use frozen chicken, just add an extra 30 mins  to cooking time.  I love to take the chicken out of the freezer and pop it right into the crock pot…easy!

Here is the breakdown:
Can of bean .45 cents

When you stock up on items at their lowest price, and fill your pantry with them.  You are then able to use them for weeks to come, saving your family time and money.

Honey-mustard, bacon wrap chicken
Cut chicken breast into strips, and pour 1/2 cup Kraft honey mustard dressing over the top.  Cover and place in refrigerator for 30 minutes or an hour.

Take thin strips of bacon and wrap them around the chicken strips.  Tucking the ends of the bacon under. Place on baking sheet and bake at 350 degrees for 25-35 mins, till chicken is fully cooked.  Last 5 minutes turn oven up to broil to crisp the bacon (keep and eye on it so it does not burn)

Ways to use your POST cereal.

Make your own Granola Bars
This week I was able to get Post cereal for .17 cents a box.  We like to make our own granola / cereal bars.  At this price you can’t go wrong.

Start out with 8 cups of cerea,l I used Blueberry Morning.  Honey Bunches of Oats, or any Post Selects cereal works  great too. 
Then add 1 cup coconut,
 1/2 cup sun flower seed, 
1/2 cup crasins
 (You can use what ever you like, nuts, berrys, dried fruit.)
Mix together in a large bowl

In a large sauce pan, add
1 stick butter ( 8 TBSP)
3/4 cup Light Karo Syrup
3/4 cup sugar

On Medium/High heat
Stir till well blended
Boil for only 2 minutes, take off heat and add 1/2 teaspoon vanilla

Pour over the top of your cereal nut mixture.  Stir well 

Pour into a buttered 9×13 pan.  FIRMLY press into the bottom.  If you do not press it down enough, they will not stick together.

Let cool for 1 hour.  Then cut into bars, it makes 18 large bars.

Bag them, they stay fresh about a week.  Or you can Freeze them.

Thrifty Ready Serve Bacon

Have you tried the ready serve pre-cooked bacon?  It is pretty good, and fast.  The only bad thing is it cost about twice as much as the normal Bacon.  I thought I would tell you how we make our own Ready Serve Bacon.  Last week I got bacon Free at WINCO and this week it is on sale for $1.99 at Albertsons.  With a little bit of prep to can have your own ready serve bacon at half the price.

Place the uncooked bacon flat on a baking sheet.  Bake at 400 degrees  20-35 mins.  You have to keep an eye on it, depending on how thick it is.  The thicker it is the longer it takes to cook.

I like my bacon crisp…but you have to leave it just under cooked a bit.  Crispy on the edges but still able to bend with out breaking.

Drain on a paper towel,  let cool.  Place in zip lock bag, you can freeze it or keep it in the refrigerator.  When you want to have hot Ready Serve Bacon just take a piece out and place it in the microwave for 45 second up to 1 Minute.  Enjoy your ready serve bacon at half the price!

Thrifty Breakfast Pizza

I wanted to share this recipe with you.  Many of the ingredients are ones I have picked up for FREE ( eggs, bacon, biscuits, season all)  So making it was fun and THRIFTY!

Spread 6 large Grand Flaky biscuits on the bottom of a 9×13 in pan

Sprinkle 4-5 cups frozen hash browns on top of biscuits, ( thaw hash browns)  season your hash browns with salt and paper ( I use Season All)

Cook1 package of bacon,  chop up, and spread over the top.

Grate 6 oz of cheese on top in even layer.

Beat 6-8 large eggs up, then pour in even layer over the top, salt and pepper the eggs.

Bake un-covered at 350 degrees for 35-45 mins till eggs are done in the middle

Let rest  about 5 mins then enjoy!  My family loves it!
This recipe came from my Mother in law (thanks JoAnne)  She makes it with croissant rolls, and breakfast sausage.  But I changed it to use the FREE items we had on hand.  

Thrifty Steak Fries

Now that I have told you how to get Free McCormick Season All, I thought I would tell one of my favorite way to use it.  Take 3 potatoes, cut them into wedges.

Put them into a bowl, add 1 Table Spoon of oil.  Mix  well till coated, then sprinkle them with Season All, as little or as much as you would like.

Spread them on a baking sheet bake them at 350 degrees for 20 mins, turn wedges over and bake another 10-15 mins.
This is a great side dish, My kids love them!
